Click on the text on the button itself (not on the panel tree to the left). Then right-click on the text (you have to click on it first to get the focus there, or righ-click won't work), and you should get an option to edit the text on the button. Whatever you change it to will be reflected on the corresponding entry on the panel tree to the left. Goofy, I know, but it works.
