I edit most of my kayaking videos with iMovie. It's fairly easy, and actually has quite a few features, for what it is. I've been out of the television production game for so long that I wouldn't know where to start on camera recommendations, though. I have found that you can do some pretty good multi purpose shooting with a GoPro, but you really do have to pony up for the black, rather than white or silver. However, GoPro lacking a physical zoom really sucks.
