Does x10 light switches make that loud clicking noise when turning on and off like some videos I have seen online?

The switches don't make that load clicking sound, the Appliance Modules or Super Socket Outlet Modules do.

YES - the click noise is let you know the switch has been activated/deactivated.
So you dont pull your hair ouy trying to find out what the problem is if the device, lamp, is the problem if not working.
