I'm looking for a DVD Recorder, set-top, that has a few unusual requirements.
(1) Are there any with discretes...mainly discrete power?
(2) Are there any that can actually record from a 5.1 source instead of 2.0?

Discretes should be easy. Look at Sonys and Pioneers. Every device I own from either company has discrete ON and OFF commands. I've never seen a DVD-Recorder with 5.1 in. You can copy DVDs on your computer including the 5.1 audo tracks. I suspect the set-top boxes don't have 5.1 in simply to please the RIAA. You can copy, but your copy will be lesser than the original (with respect to audio, at least).

Yeah...I'm not really looking to copy DVD's, but rather use it for recording TV shows. Since the cable box has 5.1 out, I was hoping to be able to record that. I guess I'll settle for 2.0 though.
