I took the day away from the office and took a trip down to my relatives and helped them gather ~600 gallons of maple tree sap for them to boil down and make into liquid gold.

How many trees does it take to collect 600Gal in one day?
That's got to be larger than mom/pop operation, right?
What do they do with it other than maple syrup? Any other unusual uses?

I believe there are approximately 500 spiles. Majority of the trees have 2-3 spiles but some have up to 6.

Just a ma/pa operation for friends and family (they aren't licenesed to sell it). Only thing they do is maple syrup.

The collecting process is never the hard part its the boiling, clensing, and canning process that takes forever. Once you start to boil it you can't stop or it will go bad (dark and not taste the same) so someone has to stay out in the bush to keep the fires going. Clensing and canning is done in the house and is quite the operation (quite messy as well).

Fourth eye surgery at 7am this morning.


Back home by 10am, eat something since I couldn't last night, and off to be for the next 7 hous.


Now I wait for the eye to clear so I can actually see again....




Glad this is the last eye surgery.....

JMac, Yes you are correct, since they can't legally sell it they must "give" it away. They do keep some for themselves but do share with family and friends. I am sure since you are in Montreal you are used to some of the best Syrup in the world, I am not sure how well this stuff compares.

Mario, no you haven't gave it to me yet... Although I am not sure how well customs will allow the shipping of maple syrup across the boarder without the proper documents since it is considered food...

They choose not to sell it as its just that much more work. They need to grade the syrup and have the proper government regulated facilities to boil and can the syrup which get inspected on a yearly basis. Its just not woth the hassle for them.

Every year is hit and miss as some years they will be lucky to get 600gal total. They don't tap every year, just when their personal supply is getting low (every 2-3 years), so it isn't as much work for them than it is for a family who is trying to make a living off of it. They do have a lot of storage and we have quite a large family so quite a bit of their supply is gifted.
