I would say they are probably designed specifically for the Symphony series speakers (which you are installing) and would probably sound better.

Is this a commercial job? If so, only the ceiling enclosures would need to be fire rated, and only if the ceiling is a Plenum design. Possibly the wall if it is a 'fire wall' Normally an exterior wall to a hallway etc.
