It is not impedance. Instead, the twisting acts as a virtual shield, nullifying induced signals so that noise is not picked up. Also, the more twisty, the higher the frequency response. Compare CAT3, or garden variety inside wire, with CAT5; the main difference is the amount of twist and regularity of the twist.

Speaker wire is usually incidentally twisted, not enough to help.

But again, if they want twisted pair, are any phone wires in the room unused?
