I've always just coiled the low-voltage wire inside the box, or tacked it behind a 'plaster ring', and never had an issue. In fact, I don't believe I've ever had an inspector even mention anything related to any low-voltage wiring I've ever done.

It's as if they don't notice it, or care about it, or as if they have no jurisdiction over it at all. Maybe I've been lucky. One thing I've learned is to never point something out and ask if it's okay. It's like being pulled over by a cop; keep quiet.
