The first year he made Mexican lasagna. It used tortilla shells instead of noodles and taco seasoning in the meat. Last year he made chuck wagon casserole which is really a bumper up chili (I think it had corn added in) with cornbread on top.
It really can be anything. Breakfast, main course, dessert, whatever. I think one thing that helped him last year was the recipe required him to do some knife work cutting up onions and peppers instead of just opening cans and dumping stuff in.
Oh, if my son had his way, he would be killing something and cleaning it and cooking it up too. But the time frame makes that kind of tough
