Crawfish are much heavier than shrimp. So a normal serving size for crawfish would be 4-5lbs per person. Where 4-5lbs of shrimp is A LOT of shrimp.
Also, I'm not sure baking them for 20 min would be enough? Or that the seasonings would permeate in the time allotted.
And if you can see the meat to tell that it's turning white something is wrong.
