As I said, it's a great recipe for shrimp. We love it in my house. But crawfish is an entirely different animal (pun intended). You really don't want to cook a crawfish that is already dead. Opening up a crawfish that hasn't been boiled is not a pretty experience. And it would take someone forever to peel enough crawfish to make a recipe from just the tails. 2 lbs of shrimp tails is two lbs of edible shrimp tails. 2 lbs of unpeeled crawfish is like 8 crawfish tails (maybe 4 ounces). This recipe, while it works wonderfully for shrimp, would not do much for the crawfish, flavor wise.

Definitely use zetarains and use the bagged stuff with the soak at the end. My family is from La. and it never ceases to amaze me here in Texas the number of people that boil the crawfish then try to put the seasoning on it after it is done. It does nothin for the taste and just ends up coating the shell and your hands. Then when the beer you are drinking kicks in and you forget to wash your hand BEFORE going to the bathroom, your powder coated hands end up burning hand prints into your man parts.

Cooked with shell on and peel as you eat. Judging by some of the characters from the area I will let it be bbq since they do not know any better. So what do they call meat that is actually bbq?

Crawfish are much heavier than shrimp. So a normal serving size for crawfish would be 4-5lbs per person. Where 4-5lbs of shrimp is A LOT of shrimp.

Also, I'm not sure baking them for 20 min would be enough? Or that the seasonings would permeate in the time allotted.

And if you can see the meat to tell that it's turning white something is wrong.

I usually get my sacks of crawfish from LACRAWFISH.COM and they include their powdered boil of which BOTH 1lb sacks go in the water. If you get them somewhere else, buy and use this stuff:

Use at least half the jar if you get a sack of crawfish (30-35lbs). You cant really go wrong using the whole jar either. This won't make them super spicy. You need to add cayenne as well. And A LOT of it.

One more question. How big of a pot do I need for a good sized boil? Say, 12 to 15 people.

complete waste of time crawfish is. Hate it. WAY to much effort for so little meat. Remember, there are MANY people that wont eat crawfish so stock up HEAVY on the veggies so every one is happy. I pretty much turn town crawfish boils these days. Always a good idea to offer something else as well, shrimp is easy. WAY easier.

Boils tend to be more about the comradery than that shitty little piece of meat anyway lol. So, they can be fun.
