Just use CAT. Unless there is no CAT available, then use the Coax.
It does not mean that you can omit to run the coax to the TV locations entirely.
Use a dedicate switch for U-verse set top boxes if you have more boxes than their gateway can accommodate. And use another switch for other Ethernet connections.
