Steve for you the easiest/least expensive way for YOU to do this is to buy one Roku per TV.
The way a PRO would do it: Change All TVs/AVRs to ensure they all have HDMI. Install an HDMI Matrix system, that is compatible with the other equipment on the Job. Reduce the number of sources, no need to have 7 STB if only 2 people live in home. Install a Control system/universal remote for each zone.
