I am trying to determine if any IR remote will allow me to operate a cd/dvd changer remotely by displaying the cd/dvd output normally shown on the device LCD itself. The background is that I am installing a whole house audio system and want to put a cd/dvd changer in one room of the house and control it from another room (including searching for, viewing the search results and choosing a cd/dvd title). Can the LCD screen of a IR remote display this information or will I have to go with a LCD screen/control on the wall?

The short answer is no. That's very specific behavior that will only come with OEM remotes, like the Sony LCD and the Kenwood (and there are others). THIER remote will show the display from some of THEIR changers on the remote itself. No other remotes do it, it's proprietary.
