Is it possible to make a remote like the Philips TSU2000 or the Marantz RC5000i connect to a PC through some sort if IR interface and retrieve a dynamic list, like a list of mp3's? Would be real cool if you could control your entire mp3 selection over such a remote.

I haven't done this myself but I've read reports of others doing something similar.
They buy an IR receiver that plugs into the pc serial port. Then download a free program called "girder" to map the IR commands to whatever you want in the pc. You can use many inexpensive remotes or keyboards for this.

Do a search on the net for something called "IR Man" It costs $30.00. We have used it for many clients MP-3 Collections through their background music keypad systems.

Regarding your question about seing the display of your mp-3's on the pronto. Why not modulate the video of your computer to every tv in the house instead of the pronto. A lot cheaper and easily done. Thats we do and the clients love control of their mp-3s from their home theater or master bedroom

To view the list I think you can use the supernudilist utility.
