Does anyone know of any discrete codes for Hitachi gear? I'm specifically looking for Power On/Off for my Hitachi TV.

That would be a big nada, unfortunately. I almost decided against my Hitachi 43FDX01B for this reason, but ultimately couldn't resist it for my first digital, RPTV.

I'm pretty sure there's no way to even simulate discrete power codes: I believe the set senses IR at all times (the usual trick is based on the fact that some sets are "blind" to IR for a few seconds after powering on). You'll be able to simulate discrete video codes since the set always returns to the tuner when chan+/- is entered.
