You are all a tech savy group and probably have a mix of Verizon and AT&T wireless users, so I want to ask you a question.
We switched from AT&T to Verizon last November due to a coverage issue in an area we frequent (Verizon had good coverage, AT&T s was almost non-existant). With AT&T we had the 10GB data plan with 4 phones and 2 iPad's and we went over on our data maybe once every 6 months and it was usually an identifiable reason like a vacation.
With Verizon we got the 18GB data plan because the price was about the same as the AT&T 10GB plan and we have busted through it every month. Nothing changed in our usage patterns and as a percentage of data, every user is about the same. But every user uses so much more.
And as far as I know, none of the usage is from a site where AT&T waives data fees and we have great WiFi at the house and have turned off the "Use Cell Data if WiFi is connected, but slow" feature.
So is it possible that Verizon measures data differently? I would think if everyone who switched had this issue, it would have resulted in a class action by now.
Any thoughts? Suggestions?

Did you install a VZW SIM card? Or did you purchase different phones? Are they totally different phones, or are they the same make and model phone, but original on a VZW?
I ask because my current iPhone 6 plus was on AT&T. After about a year I went back to VZW using the exact same phone. Just installed a VZW SIM card. Personally, I haven't noticed any differences. But I also switched jobs. When I was with AT&T I was at a place that had wifi through out. But then on VZW I was on the road.
The current billing cycle for me started on 5-23-2016, and so far I've used 0.9GB on just my phone on VZW. Several of those days, like 3 to 5, I listen to Pandora for 7 to 8 hours while working.
So take that with a grain of salt.
What phone(s) do you have anyways?

Check your email and notification settings. The default on how often the devices check for new messages could be different and wasting a lot of data

they both probably lie on usage and always bill u more then u use. the phone itself shows you how much data u use. just reset it every month on your bill date.
i have a 30g att plan with rollover. i average 16gb a month or so on one device. lol.

I'm glad you asked that and have even a more severe story of my own. We've always been with Verizon. We had the 3Gig plan. (I don't do much on the phone that chews up data). We never went through it...Not one time in the entire time that we (3 of us) owned iPhone 5's.
We went to get the iPhone 6. They sold us the 10 gig plan like you, We've went through it about a half dozen times.
It certainly is odd isn't it. None of our habits have changed...So you're telling me I'm using TRIPLE the data that I was prior? I don't think so.

How about if you guys removed the SIM card while the phones are on. Then while they are out, reboot the phone. Since ya'll have iPhones, press and hold the Sleep/Wake button with the Home button until the Apple logo appears. Should be about 10 to 15 seconds. Insert the SIM cards and see what happens the following bill period.
If all else fails, go to a VZW store. I mean I find to hard to believe that ALL devices are messing up on the accounts.

What devices did you have prior on AT&T? How about looking on an individual device basis. Is the usage up on all individual devices compared to AT&T or does it come down to just some? Who has those devices? Could be more data is being used with all new features that come with the device.
Notifications and location data could be a culprit. I think Facebook corrected the issue with their app where it would use data in the background constantly even if you closed the app. Background App refresh is another place to look in settings.
If this comes back to a single device, it could be a corrupt App.
