We are doing a Crestron system for a customer and we spec'd the TSW-1050 touch panel for the kitchen and the main interface. the client would like to know what it would take to have the panel pop up like a TV.
Brendon and others have posted images of their kitchen TV installs where the display pops up through the stone counter top.
Has anyone done this with a touch panel?

Not with stone but I have seen a touchpanel pop out of the arm of a theater seat.
Automotive power window assembly (Volvo IIRC), a 12v DC power supply and some fabrication made it happen.

This may not be what you want, but Crestron does make a 4" pop-up touchpanel.
