Generally a computer will only let you select sound fields that the hardware supports. So if its letting select 5.1 then there should be a way to output 5.1.
As mentioned above its possible that the 3.5mm jack doubles as an optical or COAX digital out based on your settings.

I've also seen laptops that used the mic jack as the reas and had a 3rd line in/out jack used for center/sub.
