What are the significant differences between these three? (other than the 800 and 850 being RF capable)

The 850 has a better "select" button. That's about it.

MX-700 -> MX-800: Adds RF. Case switches from beige to silver. Plastic ring around menu pad switches from transparent blue to painted silver.
MX-800 -> MX-850: Case switches from silver to graphite black. Keypad style switches from hard glossy GemStone to a softer, matte light/dark grey painted finish with laser-etched labels (as with other newer Complete Control models). Menu pad adds a much easier-to-use dedicated center SELECT button. Compared to my MX-700 and MX-800 models, the MX-850 has much bluer screen backlighting (although button backlighting seems the same green as before).
Note: I have not seen current MX-700/MX-800 builds in a while, however the MX-850 definitely no longer reverses the screen when the backlight is enabled (which otherwise causes "white" text on a black background). However newer MX-700/MX-800 models may also have dropped the reversing feature... which is a good thing, because it tends to make the screen unreadable in middling light levels.
