What software or hardware do I need to to learn what codes are coming out of a remote?

You will need a cheap UEI learning remote, and a JP1 cable. See this forum.

Why do you want to do this? What do you want to do with that information? What form do you want or expect the information to be in? What remotes are you thinking of doing this with?

I seem to be on a soapbox here, but one of the things to learn early here at remotecentral is, the more detailed information you give us about what you are doing, the equipment you have, etc., the better will be the responses.

It is quite possible that edmund has read into your question exactly what you intended. It is also possible that you want to use an RF remote such as a Pronto to control a ceiling fan, so he could be way off base. You have not given enough information to really know.
