I just would like to know how often to recharge

Is it OK to charge it every night no matter how empty/full the battery is or is it better to use it until it strikes and the recharge it.

In the second case if that happens during the day is it OK to recharge for 15min only so one can use it and then recharge fully during the night?

Well, since the battery is NiMH, I don't recharge it until the battery gets significantly low (low battery indicator). Figure on getting about 1000 charges out of it before it dies. I've got original batteries that have lasted me many, many years going back to the original release.

If the battery pack does die can you replace it with 4 AA NiMh cells?

And use the docking station to charge the batteries in the remote? No.

And remove the batteries and use some other external NiMH charger? Yes.
