We typically use VGA to 5 BNC "breakout" connectors, and MIT One-wire with BNC connectors for RGBHV runs from the equipment to the projector.

You can make the exact length you need.

www.BTX.com also offers a lot of cables and can custom build any length of any type of cable you need with no minimums. About the XLR plates...I'd buy a prefab connector panel made of metal. XLR connection is incredibly rugged and makes a lot of sense, even if your not running a balanced connection. If you need stereo or 2 channels, a 4 pin XLR connector would work well too. Less obtrusive than 2 big XLR connectors. Even though I have RCA's to my subs I still ran star quad cable in case I ever need XLR connection. Personally, I'd go with ALL Neutrik connectors, black chrome shell with gold pins...looks good...performs even better. I don't have a HD15 connection to my projector, but knowing how much of a pain in the ass it can be to make a HD15 cable, I'd go with a premade or custom made one.
