Yes, I do understand how annoying it may be but if this guy is 70, he's not that much older than me, so I don't see age being a particularly good excuse.

Yes, but in almost 70 years some people learn to be wise, flexible, and open to new things, while other people double down on the learning level they were at thirty years ago. Age is not the excuse in some cases, but rather what they call "failure to thrive" in the NICU. We informally call it getting stuck or stuck in a rut.
A good answer is easier with a clear question giving the make and model of everything.

I would bet that most people really don't like change, unless they have been exposed to it in the way we are (and others who are involved in technology). Those who are in a field that moves slowly will adopt that speed in their own minds, unless they have some amount of innate curiosity. I know people who seem to have absolutely no curiosity and they're extremely annoying.

Some people seem tired of learning. They went through many years of schooling and they are tired of learning because it is hard work. Not being able to learn how to operate some tech gadget is a form of rebellion. However, if the motivation is high enough, they’ll learn. These same people quickly learned how to receive pictures from the grandchildren.
