I’ve been approached by a Fire Dpt that uses a surveillance drone that transmits video to its controller and tablet. This system has an HDMI output and their hope was to use a wireless HDMI transmitter of some kind to transit the signal to a monitor in a command vehicle which could be upto 500m away.
Is anyone aware of a product that’s capible of this?

I'd think some geek in the city's communications department would LOVE to implement this and already has information on how to do it. They might already be doing it.
Look for a hobbyist forum. Visit the shop where you'll buy the drones and ask them. Contact drone manufacturers. People who want to pump out product want to profit by making their products useful in more ways, so it makes sense that they might have some idea. Some HAM radio operators in your area might have an idea, too.
You might find that use of this by city or county facilities requires that all the equipment meet stringent operational and security requirements, as, for instance, some of this footage* might be used to convict or acquit someone in a legal situation, e.g. starting a forest fire.
*Footage. As though all the pixels were in a long string. But what accurate word can we use?

Wireless pairs that will cover that range are not too uncommon in production, and as such are not cheap, but tend to work well, and are decently rugged teredeck bolt [Link: teradek.com] and vidovation vidolink [Link: vidovation.com]

There is every chance that they are using Dji drones and most likely already using the Dji Lightbridge system.
If so, the system is already capable of transmitting to multiple devices at the same time with the use of extra receivers. There is no point in trying to re-transmit what the drone pilot is seeing from his location. You're better off having the drone transmit to both locations simultaneously.
Do a Google search of DJI Lightbridge or Lightbridge 2.
