What about those optical to HDMI cables like the newest Sonos devices use?

They are simply audio extractors.

It sounded as though Sonos will be making those available, but are they available elsewhere?

There are a bunch of HDMI to TOSLINK converters available, but I think that the SONOS converter is the most convenient -- and it's reasonably priced.

From what I can see, this is an Optical to HDMI comvertor that will allow the use of the optical port on you display to connect to the HDMI input on the Sonos device.
