Keep in mind that some coffees need a little rest after roasting. Espresso blends especially need 2 or 3 days after roasting to lose that baking soda taste. I think a lot of varieties peak at 7 to 10 days after roasting and by 3 weeks they are starting to fall off the flavor table....
