Ive got a set of speakers and a DSP amp i need to setup, ive not done it the manual way in the past, ive always used sonance speakers and amps, and in the amp they have a drop down DSP / EQ for the speaker type you've connected.

Does anyone have a workflow / tips on EQ'ing / DSP'ing a set of speakers manually to an amp ?

What are you using the DSP for? Generally, I would equalize first because you can then set the levels such that you will not blow past the maximum permissible peak level presented to the DSP processor due to a peak in the equalization curve. For best signal to noise ratio and best performance from the DSP you want to present the DSP with the highest level that does not overload the DSP.
