I had a variation of this happen with a client whose husband "heard" one thing and the wife "heard" something else when I went over their proposal.

My recommendation would be to "Columbo" your client. Columbo was a police show and he was a detective in that show. He always asked questions he already knew the answers to in the show.

I would set up a meeting with the client to discuss the items "omitted" and bring copies of your original email exchange and bring the cut and pasted email, also.
I would show the client the false email compared to the originals and innocently ask "Client X, I'm having trouble reconciling the email you sent showing both line items are included whereas my originals clearly show that only the IR only was included. Is there a chance you might explain how this might be possible?".
A nice open-ended question like this should get the client squirming and stammering to respond...

Dont play games or beat around the bush. Create a pdf file with the emails in chronological order and highlight the important parts.

"The item you are asking about is not part of the original scope and we do not have an agreement after the fact. I apoligize if there was any confusion. Please reference the attached PDF file that shows our email exchanges in chronological order."

Ask if they want to pay you to bring the item in question out and install it. Done.

I had a potential client tell me that when he was getting quotes for his pool, he would scan and modify the quotes to lower the numbers, then give those quotes to the other companies bidding to get them to come back lower.
What a F**ktard.

This is the same person who feels that the companies are inherently unethical. He'd have a great career in Washington, DC.
