My jobs are all so different. Aside from theater/media room I've done a a couple hallways. These were both more large galleries 60-75ft long and 6-8ft wide. I've also done acoustic walls in home gyms and billiard/game rooms, a performing stage. A play room that had rubber gym mat behind the fabric from the floor to 4ft up the wall and then absorption material (Bonded Logic) above that.
The Unika Vaev stuff is expensive, but really useful. I've used it for feature walls in living rooms and great rooms and as a pin up board in the corner of a large kitchen. I've also cut it up to install in the back of shelves and placed it under tables, benches and other furniture to reduce reflections off tile & terrazzo floors.
I've also used some products from SnowSound who make some prefab panels that can be wall or ceiling mounted and also suspended or mounted on stands (see "Flap" product on their website).
Currently I'm doing some research and have samples from companies that produce plaster that's trowel applied over an acoustic substrate so you end up with a plaster finish that has good NRC rating.
http://www.baswana.com/Aside from acoustics I've also started doing some noise abatement work and have been gaining experience with making homes quiet. This has mostly been sound isolation for mechanical rooms, laundry rooms, theater rooms, etc. but I've also gotten involved tracking down noise from plumbing, ducting, RO filters/pumps, pool equipment, fountain pumps, etc.
What I've found doing this is when you reduce or eliminate one noise, you start to hear another noise so even if you're reducing the overall dB readings in the area are reduced there's almost always something that's going to make some noise.
