I have a project where the customer wants to record the HDMI output of a camera onto a computer and upload to youtube (and also keep the recordings for archive) We will be using the Clearone Unite200 camera. Do you guys know of good software (for windows) to do this? Also, we a need a good HDMI capture device. Any ideas???

Extron SMP will do exactly what you want.
It will capture HDMI plus audio, create an archive and production file (selectable video and audio bit rates), package the files and upload them to a NAS or a USB thumb drive. MP4 files.

It is an IP stream and camera too but I would think the quality out of the HDMI would be better than the IP stream. It's a Clearone Unite 200 camera. Thoughts?

I'd still recommend the Extron SMP for what you're looking to do.
You could maybe use the IP stream through VLC and then use the type of software linked above.
Personally, I'd use the HDMI output. Plus, it's a one box solution that wraps it all up to a MP4 format ready to be used for whatever the client needs it for.

The MSRP on these units starts at $3400 for a single channel HDMI input, along with audio, etc.
Prices rise on up to roughly $11K for dual channel, larger hard drive.
Not sure on what editing software is typically used. The units create a MP4 file, so anything really that accepts that file format. Recordings can be stored internally, packaged onto a USB thumb drive, or uploaded to a central storage location. Also integrates with iCalender and a few other services that I don't remember.
Model numbers for review would be the SMP 111, 351 and 352.
