I like the Sonos route and understand the Sonos route. The home owners are adamant about not wanting to use their phones or tablets to control the music system and I am not going to provide them with a system that they have specifically stated they don't want.

I understand the failure rates of equipment and the fact that most of this stuff becomes obsolete within a couple years, however the home owner is asking for something that is still available in one way or another and he wants this type of system.

If I really wanted to I could quote him a Crestron system with two amps, two tuners two streamers and 8 Crestron keypads, but I think that may be overkill.

You keep skipping over the part that has been repeatedly suggested. In wall iOS device. A permanent keypad solution. Lock it to Sonos app and your done.

He doesn't want to use a wireless solution. Whether an iPod is mounted on the wall or in his hand it is still communicating wirelessly to the Sonos players.

This is a wireless option that the home owner has specifically stated they don't want

I am surprised no one has suggested SONOS yet. It is the perfect solution 100% of the time even if they do not want it. SONOS!!

Sorry... but if I am to take what you are telling me the customer is saying at 100% face value - then the customer is f^n stupid!
You are telling me that a keypad in the wall (that they can't see the wires to anyway), makes a difference to them if it communicates back on a wire in the wall or wirelessly. BS!
Get the iPort mini kit ($299). Put a iPad Mini in it ($249). Then show them the custom touchpad you are installing in the wall is wired "See". They don't need to know more than that.
Tell them you can upgrade the device latter with icons to control lighting, HVAC, CCTV, and other cool things too. SONOS for the win.

[edit]: Just looked up the prices = You can do an iTouch for $199. And Vidabox has a solution for $149 that is surface mount over a single or dual gang box (only 1/2" coming off the wall). Just use a POE switch or POE injector. $350 per room - but since there is very little markup I would charge at least $450 or more for that solution (that just the parts).

Nuvo:

[Link: legrand.us]
+
[Link: legrand.us]
= 4 WIRED zones
Same combo in both locations. Higher wattage components are available if needed.

or

= WIRED keypad or touchpanel

Each zone allows for analog input which is available at all other zones - synced.
All zones are linked as long as they're on the same network. Your single cat5 will do it - nothing wireless.

BTW. That 7" POE touchpanel is an android. You can run any other app in addition to or instead of Nuvo (sonos). And it's cheap.

Was not aware that Nuvo added a touchpanel to their system. That is a good viable option then.

Is their objection to using hand-held devices, or to Apple products?

A lot of the android tablets can be hard wired ethernet via adapter. There are even PoE versions.

At each multiroom head end I do have one Cat5e back to the demark (which are currently being used) and I can get more over to the basement audio head end if need be.

When you say the cat5e that is going to the head end of the main and second floor system is being used, what is currently on it?

Is there no coax from this same head end direct to the demark?

I'm really intrigued by the seemingly random major system requirement.

They are totally against anything wireless. The house was prewired and they want to use the wires that are in place.

Is this a tinfoil hat kind of position? WHY don't they want wireless?

Looked at a job today where new people have moved into a house.

"New people"? Are you trying to skirt around the fact that these are aliens (in the truest sense) and are worried about with interference with their communications with the mother ship?

Lastly, have you thought about using Sonos?
A good answer is easier with a clear question giving the make and model of everything.
