I've seen one application of dimmers on low voltage lights that worked fine, and the key was getting a dimmer made for a magnetic load. Our load was actual 240V-12V transformers where the 12VAC was rectified and filtered. Those have been in use without fail for about five years, or maybe four.
This google response looks like the right kind of category:
Lutron PD-10NXD-WH Caseta Pro In Wall Dimmer 250W LED / 1000W Incandescent/Halogen/Magnetic Low Voltage
That 1000 watts of "Magnetic Low Voltage" is the issue: does that mean they expect the dimmer to be used with, say 24VAC, or do they expect a circuit where line voltage is transformed lower and the actual loads are low voltage loads. I can only say it's worth looking.
