The Crestron extender is only 100Mbps (same with roombox outputs), so unless you're still putting in 10/100 switches, I question why you'd want to run fiber and then bottleneck the equipment at the far end of it.

If it's just a party barn and pool house, how much speed do they need?

You could also use a pair network gigabit switch with SFP ports and run your internet over fiber. Then just put a Crestron Fiber room controller in each, problem solved.
