Yes, you can "grill" with gas.  A Pitmaster makes bbq, he doesn't grill.  

You can also use gas for bbq, you can easily put wood in a gas grill using foil or a woodbox.  Not the ideal way, but it works and it's still delicious.  

Actually, many new pizza ovens in high end restaurants are how fired by gas. Look inside in the back, you will see a gas flame. And most have a temperature control on them. Just set the temperature and go. No more building a fire off to the side every day.

Gas grills are great places to store tools for your charcoal grill and smoker.

Kamado's (ie Big Green Eggs, etc.) are very temp stable and efficient due to 1" thick ceramic walls and very good seals. And you can grill, bbq, smoke, use as a HOT pizza oven and even bake if you are so inclined. And natural lump charcoal is my preferred fuel too.

Interesting idea. A sliding cover would be good to keep the heat it.

Yes, we did. BUT this works really well. As much as I love my Weber version, sometimes it just doesn't want to work.

Instead of the amp toss or the stupid installer olympics, we should have a Cedia BBQ cook-off outside of the Denver convention center.

I believe I forgot to mention that thanks to ed I tried grilling swordfish. I seasoned the steak with some old bays and as it was finishing brushed it with the BBQ sauce I used on the cave man ribs. Then I toasted a bun and melted some provolone on the sword fish before putting the sandwich together.

I need a little more practice on grilling fish to get to just the right doneness, but it was a great meal.

Do you think I can set up a nice fire pit and do a nice slow cook like I did with the ribs I posted? Maybe we can use the area where lifeware put their two demo houses a few years ago.

Nice.  I never thought of turning it into a sandwich.  I was thinking I wanted to do some fresh Salmon in the next day or two,  I may have to try some swordfish this weekend.  Maybe just some oil, basil, and a little lemon zest.  

My problem with trying new things is I'm cooking for 5.  So if they don't like it, dinner costs double. 

How was the texture of the sandwich?  Was the sword fish firm enough?
