I have a customer with an Apple G 4 which has a DVI output that I m lead to believe is a DVI-I port. He wants to hook it up to a projector, preferably a Panasonic PTAE300. The Panasonic has a DVI-D port, can these be made to work together?

DVI-I is simplya Conector that has BOTH Analog and Digital transfer capabilities. DVD-D is Digital Only. ALl you need is a standard DVI-D Cable to interconnect them.
That being said, that does NOT guarantee compatability with the Panasonic Projector.
You need to make sure the Digital DVI Output of the Mac is compatible with the Input frequencies the Projo supports. On Consumer Video Projectors, thats pretty rare right now.
You may have to go to a DVI to VGA adaptor and run the Mac analog to the projo.
