My fireplace works on an electrical switch. Can I connect this switch to a IR sensor and use the AV2100 to operate it?

Yes, you can get an IR triggered relay and control the fireplace that way.
You need to ask yourself if this is worth the small but possibly serious risk of the fireplace triggering when you are asleep or out of the house. If the flue is closed and the fireplace went on, this could a property damage or life threatening event. I would not have thought this way myself until talking with a builder about it last week; one of his units was equipped with an RF remote for the fireplace that happened to be triggerable by the neighbor's garage door opener. The fireplace was on when the homeowner came home, flue closed, heat and carbon monoxide building.
