I'm having a hard time finding out how to turn any modern TV On and Off through HDMI-CEC, could you give me a hand?
If you know other ways to do it apart from CEC, I'd be happy to hear it!

Iíll echo djy. Generally, I disable CEC because it can cause unintended ON/OFF events. For example, if a device is updated in the middle of the night, it might switch ON ó causing the TV to respond. This is not a big deal if an empty Blu-ray player starts up, but a blaring Cable channel would not be welcome.

Crestron with their DM matrix is the only way to directly control CEC. Other than that it is a crap shoot hoping one command does not step on another.
