Does anybody use these in a production environment?  Is the video preview more that 4 cameras at a time?  Looking to ditch DW for something a little better.

I've integrated several using RS-232 and IR, and they work well. The new firmware also supports control over ethernet, but I haven't tried it yet.

I don't understand your "video preview" question...

I'm still not sure what you're referring to by "preview"...

There's a "quad", "split-screen", or "multi-view" function, which allows you to view multiple cameras simultaneously, in either a 2x2, 3x3, or 4x4 grid. There's also a "spot monitor" function which allows viewing cameras on a secondary monitor, independently of the "main" monitor.

These features are standard on almost all modern DVR's, including Digital Watchdog and Snap AV (WirePath).
