You're talking about a major investment in equipment...not to mention way too complex. A Laird Blue Flame Pro will convert Component signal to firewire and vice versa, in realtime. 1 rack space high, but it's gonna set you back about $2600...still less than a Mac system with final cut pro and component input hardware.
I should add that this device only accepts 2 channels of balanced audio. It won't encode multi-channel audio.
