Because today you might not need it but tomorrow you might. It could be something as simple as needing to add a camera or remote gateway or it could be something bigger $. I was just doing some minor service work at a house we did 6 or so years ago. The client sold the house. New owners are taking over next week.
The first client didn't want touchscreens in the wall anywhere but we wired a Cat5 to every Lutron keypad. We have 100 lutron keypads in the home. Thats 100 extra Cat5s that can be used for new touchscreens.
Just do it. Future you will thank you.
