A lot of the newer Sony and JVC projectors are very quiet. The Epson depending on model are also quieter than they used to be. For a 100" screen definitely use lower power mode to make it even quieter. knowing which model he has now could give us a reference, some models could definitely be pretty loud especially in high power mode. What's the budget? Any limitations on projector placement?
