I guess the part I'm having a hard time with is why so many say not to ground on both sides.

The rack end of the shielded RJ-45 is grounded to the patch panel in the rack, and the rack is bonded to the copper bonding bar - just like in the diagram provide by Ernie.

The other end is usually a keystone RJ-45 jack connected to a PLASTIC plate, in a non-grounded mud ring.

One-sided grounding.
