I was thinking the same thing....My Oklahoma Joe's is a $200 cheap unit, I did a couple of mods on it, installed a deflector plate. I build a minion method charcoal basket out of a bunch of garbage I found at home depot.. I can keep the temp from fluctuating more than 5 degrees either way....On the other hand, I do use it as an excuse not to do anything.
If you're not familiar with a minion method charcoal basket...It's a must have....It'll change your life! :)
