Cat5e, Cat6 due to wire gauge are not up to electrical code to use as a traveler cable. We sometimes run coax and us an IP over coax adapter:

Or we go wireless and put an AP somewhere at the top of the shaft and one on the top of the elevator that communicate with each other.
