I'd be curious to know specifically which 3G encoder and Decoders you are using and what Specific Displays they are connected to. And, Of course, Are you using an ATV4?
Obviously, J+P isnt doing 4:4:4 (Is it even 4:2:0?) with only 500Mbs of bandwidth. How it actually handling the EDID's?
