iPad will insist on iOS updates when they come around.
You can't wake the screen up on demand.
You can disable the pin-entry but have to place it in 'retail-mode' <- this is not the actual name, but drawing a blank->
Reliant on wifi (or a mess of dongles to add ethernet AND power) for connectivity.
