While I've never worked as a restaurant employee, I've installed enough restaurant systems to develop that "never any horizontal force" walk. And, it's a slippery job to pull out any equipment for service.
In fairness, there is one local restaurant that is very clean. It's also very popular and a bit more expensive than average.
I had a restaurant person bring a receiver in for service. As he dropped the unit on the counter, its inhabitants started to bail out. Not wanting any "refugees" in my store, I performed an emergency maneuver to seal the unit in a trash bag and fumigated it later. The customer was amused that I would be so over the top about a few hundred cockroaches.

It is testimony to the human body's indestructible design, given that most of us survive the restaurant experience.
