I've been using an USB to 3.5mm for years and see no settings for surround sound or whatever. And just to get it out of the way. I plugged the Klipsch directly into the 3.5mm built into the Mac mini. No difference.
Besides, I've gone to websites that has 5.1/7.1 audio testing. Actually got the address from a thread on here. And I can hear all of the channels on my 2 channel. Of course it's down mixed. But nevertheless, I am hearing all of the channels.
