You can AirPlay the video to an AppleTV and audio to the AVR. But that's way too many buttons and settings to change.
So if you AirPlay just to the AppleTV with it hooked up to the AVR. Then both audio and video will be done through there.
Of if the client just wants the audio to play through the AVR but still have the picture on the MBP. Then using the built in AirPlay in the AVR is a viable option.
